Easy-Peasey Skinny Creamy Chicken Curry

I love chicken curry and I also love quick, easy, cheap recipes and if that can also be a skinny version without sacrifice, I’m all in.

  • Fry chopped onion until soft & browned. Add garlic. Ginger too if you have any.
  • Add chicken chunks, cook for a few minutes.
  • Add nigella seeds if you have them, just for the smell really
  • Add curry powder, as hot as your family like it.
  • Add a whole tin of Heinz chicken soup
  • Add turmeric
  • Add anything green – beans, courgette, sugar snaps, broccoli (admittedly this is my choice as I have an irrational fear of the kids getting scurvy). You could add mushrooms, peppers, whatever you have lurking in the vegetable drawer.
  • Add seasoning, and perhaps a chicken stock cube.
  • Simmer until the chicken is cooked through.
  • Add chopped coriander (optional)
  • Serve with rice.

As you can see, a creamy curry with a fraction of the fat of most curries.
