I love chicken curry and I also love quick, easy, cheap recipes and if that can also be a skinny version without sacrifice, I’m all in.
- Fry chopped onion until soft & browned. Add garlic. Ginger too if you have any.
- Add chicken chunks, cook for a few minutes.
- Add nigella seeds if you have them, just for the smell really
- Add curry powder, as hot as your family like it.
- Add a whole tin of Heinz chicken soup
- Add turmeric
- Add anything green – beans, courgette, sugar snaps, broccoli (admittedly this is my choice as I have an irrational fear of the kids getting scurvy). You could add mushrooms, peppers, whatever you have lurking in the vegetable drawer.
- Add seasoning, and perhaps a chicken stock cube.
- Simmer until the chicken is cooked through.
- Add chopped coriander (optional)
- Serve with rice.





As you can see, a creamy curry with a fraction of the fat of most curries.
